You don't even need the chip. Those are used in the cocktail to say flip the
game screen for player two.
I don't recall how SD/Gravitar uses the harness, but usually there is a
jumper in the harness to select either cocktail mode or directly X/Y invert.
You may be able to do it in your harness converter.
